OUR STORY

With over 35 years of culinary experience, Chef/Owner Frederick Bisaillon has built a career shaped by diverse coastal and culinary destinations—from Upstate New York to Southern California, Bermuda, the Bahamas, and Nantucket.

Now in Mount Dora, he brings that journey to life through Salt & Ember—a restaurant where elevated cuisine meets a warm, inviting atmosphere.

A Culinary Vision Rooted in Experience

Drawing from a rich and eclectic background, Chef Bisaillon creates a menu that is both refined and approachable—where fresh seafood, premium steaks, and bold flavors come together with thoughtful execution.
